Raw Apple Cake, Darlene Purser Bair

Soak 3 cups chopped apples for 1 hour with 2 tsp baking soda and 4 tbsp water.

1 cup shortening
2 cups sugar
3 cups flour
1 cup chopped nuts
2 cups raisen
2 eggs
1 tsp cloves
1 tsp nutmeg
2 tsp cinnamon
1/2 tsp salt

Cream shortening and sugar - add eggs. Sift flour with spices and salt. Add nuts and raisins to flour, then add to first mixture. Add apples. Bake for 1 hour to 1 1/4 hours at 275`.
