Chili, Darlene Purser Bair

1 1/2 tsp salt in beans to cook
2 cups chili beans
2 pounds hamburger
2 large onions
5 tsp chili powder
1 1/2 quarts tomato juice
sprinkle sugar

Tin Foil Salmon, Darlene Purser Bair

1/2 cup sour cream (spread)
salt and pepper
dill weed
onion slices
lemon slices
butter

Double wrap cook for 15 or 20 minutes then roll over. Cook 35 or 40 minutes all together.

 

Tater Tot Hot Dish, Darlene Purser Bair

Layer on the bottom of 9 x 13 pan:
1-2 lbs ground beef cooked with onion

Layer:

1 can green beans
1 can corn

Layer:
Cream of mushroom soup (2 small cans, or 1 large can)
Add enough milk to make creamy (abt 1/2 soup can)
Add salt and pepper to taste then pour over meat and vegetables

Layer:
Shredded chedder cheese

Layer:

One bag tater tots or broken pieces of frozen hashbrowns

Bake at 350` for 1 hour. For the last 15 minutes you can sprinkle any remaining shredded cheese over the top, cook until melted.

 

Swiss Steak, Darlene Purser Bair

4 small round steaks (dip in flour)
1/4 small green pepper
1 small onion
1 can tomato sauce
little water

Put steak in kettle and brown. Add onion and pepper and brown for a while. Add sauce, let cook until onions are done. If not enough juice add some water. Have potatoes and use sauce for gravy.

 

Hamburger Casserole, Darlene Purser Bair

2 lbs hamburger
2 onions
2 cans cream of chicken
3/4 cups rice
1 1/2 cups water
chinese noodles
dash of pepper

Fry hamburger and onions. Put in bowl and add soup, rice, and water. Mix and put in casserole dish. Cover with lid and cook for 30 minutes. Uncover and cook for 30 more minutes. Put noodles on top and cook for 15 minutes.

Mexi Corn, Darlene Purser Bair

1 1/2 lb hamburger
1 large onion, chopped fine

Brown then add:
1 can olives
1 can tomato soup + 1/2 can water
1 can Mexi corn or regular corn

Bring to a boil, then add:
1 Jiffy corn bread mix (mix just with water)

Spoon cornbread mix on top of meat mixture, then put lid on and turn down. Cook 50 minutes.

 

Sweet & Sour Meatballs, Darlene Purser Bair

1 lb ground beef
1 egg
1 tbsp cornstarch
1 tsp salt
3 tbsp onion, chopped
dash pepper
1 tbsp oil
3 tbsp cornstarch
1 tbsp soy sauce
3 tbsp vinegar
1 cup pineapple juice
6 tbsp water
1/2 cup sugar

Mix ground beef, egg, cornstarch, salt, onion, and a dash of pepper and form 18 balls, approximately. Brown in a small amount of oil and drain. Combine and cook over low heat a few minutes the oil, cornstarch, soy sauce, vinegar, and pineapple juice. Mix sugar and water and add. Cook until juice thickens, stirring constantly. May be made in advance to this point. Add meat balls and heat thoroughly and serve hot. Serves 6-8.

 

Finger Steak Batter, Darlene Purser Bair

1 egg
1 cup milk
1 cup flour
1 1/2 tsp sugar
1 tsp baking powder
1 tsp salt
1 tsp garlic

Stir well, put meat in, and let soak 1 hour before cooking.

 

Chipped Beef on Rice, Darlene Purser Bair

1/2 cup rice
2 cups boiling water
3/4 tsp salt
cook 20 to 25 minutes

3/4 cup milk
1 1/8 tbsp fat
1 1/2 tbsp flour

1/4 cup chipped beef

Add chipped beef after making the white sauce. Serve on the rice.

 

Stuffed Peppers, Darlene Purser Bair

2 green peppers
1 cup tomato
1/2 cup hamburger
1 tsp onion
2 tsp crisco
1/3 cup rice
2 cups boiling water
1/4 tsp salt
fine ground pepper

Combine mixture and put it in pepper. Cook 20 minutes.

 

Fish Batter, Gail Purser

1 oz baking powder
10 lbs flour
6 oz corn meal
2 oz paprika

Use enough water to make paste for dipping. Good on onion rings too.

Chicken Cacciatore, Darlene Purser Bair

Brown Chicken.

Mix together:
1/2 bottle ketchup (fill other half with water)
celery (chopped)
onion (chopped)
mushrooms
2 tbsp brown sugar
1 tbsp worchestershire sauce
garlic

Pour over chicken in casserole, bake 1-1 1/2 hours at 350`.

 

Salmon Patties, Darlene Purser Bair

1 can salmon
1/4 cup milk
2 eggs (don't beat)
pepper and salt
1 1/2 dozen saltine crackers (crumbled)
1 rounded tbsp flour

If too juicy add more crackers. Mix all together. Fry, and serve.

 

Chow Mein, Darlene Purser Bair

1/4 cup butter
1 1/2 cup dried lean pork
1 cup chopped onions
1 tsp salt
dash of pepper
1 cup chopped celery
1 cup hot water
1 can of bean sprouts drained

Thickening:
1/3 cup cold water
2 tbsp cornstarch
2 tsp la choy sauce
1 tsp sugar

Melt butter, add meat, stir and sear quickly. Add onions and fry for five minutes. Add celery, salt, pepper, and hot water. Cover and cook for 5 minutes. Add bean sprouts. Mix and heat to boiling point. Add flavoring and thickening ingredients. Stir lightly and cook for 5 minutes. Serve over noodles.

 

White Sauce, Darlene Purser Bair

Melt margarine in double boiler. Add flour and mix well. Add milk a little at a time. Add salt and pepper to taste.

Thin white sauce:
1 tbsp fat
2 tbsp flour
1 cup milk

Medium white sauce:
2 tbsp fat
2 tbsp flour
1 cup milk

Thick white sauce:
4 tbsp fat
4 tbsp flour
1 cup milk

 

Rice, Darlene Purser Bair

Pre-cooked rice
2 tbsp salad oil
red, yellow, and green peppers, diced
add to rice 1 purple onion
black olives
tomatoes, diced

Dressing:
1/3 cup vinegar
1/3 cup olive oil

Ham Fried Rice, Darlene Purser Bair

1 cup uncooked rice (use minute rice)
3 tbsp fat in fry pan
2 eggs fried in fat, then shredded. Add rice.
Cook 10 minutes and stir so it doesn't stick.
1 tsp salt, dash pepper
1 cup ham
6 green onions
3 tbsp soy sauce
1/2 tbsp sugar

Cook till hot, then serve.

Spaghetti Sauce, Darlene Purser Bair

Combine together with blender:
3 1/2 quarts blended tomatoes
1 cup green pepper
1 1/2 cups celery
2 1/2 cups onion
7 garlic cloves

 Add:
1 tbsp oregano
1 tbsp italian seasoning
1 tbsp celery (flakes or salt)
1 tbsp parsley flakes
3 tbsp basil (dried)
1/4 cup sugar
2 tbsp salt
2 tsp garlic salt

Mix together, simmer for 3 hours. Put in bottles and cold pack 25 minutes. Add 1 can tomato paste before using if you desire it to be thicker.

Swedish Meatballs, Darlene Purser Bair

Soak 4 slices of bread in 2 eggs and 1/2 cup milk which has been beaten together.

1 1/2 lbs hamburger
1 tsp salt
1 tsp pepper
4 tbsp chopped onions
2 tsp baking powder

Mix bread and meat mixtures together and form into meatballs. Deep fry until brown. Put meatballs into baking dish and cover with 1 can cream of mushroom soup, 1 can cream of chicken soup and 1 soup can of canned milk. Bake for 1 hour at 325`.

 

Crunchy Turkey Supreme Casserole, Darlene Purser Bair

2 cups cooked, cubed turkey or chicken
2 cups cooked rice
1 cup celery, sliced small
1 can cream of chicken soup
6 oz frozen cut broccoli, thawed and drained
8 oz can sliced water chestnuts, drained
2 oz jar diced pimento, drained (optional)
3/4 cup reduced calorie mayonnaise
2 tsp lemon juice
1/2 tsp salt
1/8 tsp pepper

Topping and Garnish:
2 1/2 cups corn flakes cereal, crushed to 1 cup
2 tbsp butter, melted

Heat oven to 375`. Grease 2 quart casserole dish. In large bowl, combine all casserole ingredients. Spoon into casserole dish. In small bowl, combine cereal and butter; sprinkle evenly on casserole mixture. Bake at 375` for 30 to 35 minutes or until casserole is thoroughly heated and topping is light brown. Garnish with parsley and pimento. Makes 8 (3/4 cup) servings.
