2 cups shortening
1 cup white sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
1 tsp almond flavoring
4 cups flour
2 tsp baking soda
2 tsp cream of tartar
Cream shortening, sugar, eggs, vanilla, and almond flavoring until fluffy. Add dry ingredients gradually. Roll into balls, roll in sugar. Flatten with fork on cookie sheet. Bake for 10 minutes at 350`. Can add chocolate chips, raisins or drop by spoonfuls.

Applesauce Cake (or cookies), Darlene Purser Bair
3 1/2 cups flour (4 for cookies)
2 tsp baking soda (add soda to applesauce)
2 cups applesauce
1 tsp cloves (1/2 tsp for cookies)
3/4 tsp nutmeg
1 1/2 tsp cinnamon
1 cup shortening
1 1/2 cup sugar
3 eggs
2 cups raisins
For cookies bake at 400` for 10 to 15 minutes. Add chocolate chips instead of raisins if desired.

Mrs. Fields Chocolate Chip Cookies, LaNae (Bair) Becksted
1 1/2 cup sugar

1/2 pound margarine
2 tsp vanilla
3 eggs
6 cups flour
1 1/2 tsp salt
1 1/2 tsp baking soda
6 cups chocolate chips
Cream together sugar, butter, margarine, add eggs and vanilla. Then add dry ingredients. Bake at 375` for 10-12 minutes.

5 1/3 cups flaked coconut
1 can (14 ounces) sweetened condensed milk
2 tsp vanilla extract
In a bowl, combine all ingredients. Drop 2 inches apart onto greased baking sheets. Bake at 350` for 10-12 minutes or until lightly browned. With a spatula dipped in water, immediately remove to wire racks to cool. Yield: 4 1/2 dozen.

Creamy Wafers, Darlene Purser Bair
1 cup butter, soft
1/3 cup whipping cream
2 cups flour, sifted
Heat oven to 375`. Roll about 1/3 of dough at a time, 1/8 inch thick on floured, cloth covered board. (Keep remaining dough in fridge) Cut into circles, put on piece of waxed paper with sugar on it. Cover both sides with sugar. Prick with fork. Cook for 7-9 minutes.
Filling:

Fruit Cocktail Cookies, Darlene Purser Bair
1 cup shortening
1 cup brown sugar - firmly packed
1 1/2 cup granulated sugar
Cream well, then add:
3 large eggs (one at a time)
2 cups fruit cocktail (drained)
1/2 cup chopped nuts
1/2 coconut
1 cup raisins
1 tsp vanilla
4 cups flour
1 tbsp salt
1 tbsp baking soda
1 tbsp baking powder
1 tbsp cinnamon
1 tbsp cloves
Drop by spoonful onto cookie sheet. Bake at 375` for 12-15 minutes. Makes 8 dozen.

Cream together shortening and sugar, add wet ingredients, mix well. Add dry ingredients. Shape into a roll, chill. Cut into slices and bake at 350` for 7 to 10 minutes. I put a little of the shortening in a dish with the squares of chocolate and microwave for 1 minute to melt it.

Sift then measure the flour. Sift again with baking soda and salt. Cream butter until light. Add granulated sugar. Beat, then add brown sugar. Blend peanut butter in well. Add well beaten eggs then dry ingredients a little at a time, beating after every addition. Form into 2 rolls. Wrap in wax paper. Let stand in refrigerator for several hours to chill. Bake as needed by slicing thin slices from roll of dough. Bake in moderate oven at 425` for 8-10 minutes. Makes 5 dozen.

Congo Bars, Darlene Purser Bair

Add to bowl with the oil, sugar, and eggs then mix in chocolate chips and nuts. Bake at 350` for 30 minutes.
