Salsa Fresh, Darlene Purser Bair
2 pound tomatoes
2 hot peppers
1/4 medium onion
1 tsp minced garlic
1 tbsp sugar
1 1/2 tbsp lime juice

30 large tomatoes
5 medium onions
5 jalapeno peppers
5 anaheim peppers
2 red peppers
2 green peppers
1/2 cup non-iodized salt
3/4 cup cider vinegar
1/3 cup sugar
1 tbsp garlic salt
Cook five hours or a little longer until thick as you want it. Process 30 minutes.

Pickled Eggs, Darlene Purser Bair
2 tbsp prepared mild mustard
2 cups apple cider vinegar
1/2 cup water
1 cup granulated sugar
1 tbsp salt
1 tbsp celery seed
1 tbsp mustard seed
6 whole cloves
2 medium sliced onions
12 hard cooked eggs
In a saucepan, blend mustard with a little vinegar add remaining vinegar, water, and next 5 ingredients. Cover, heat to boiling, simmer 10 minutes, cool. Pour over onions and eggs. Cover, refrigerate overnight. Serve on relish tray or as a salad. Makes 12 pickled eggs.

Fruit Leather, Darlene Purser Bair
Peel apples. Wash fruit and put into blender to make liquid. Add 2 tbsp honey to 5 cups fruit, or sweeten to taste.
Variations for apple leather:
Add 2 tsp cinnamon, or
1 cup coconut
Put saran wrap in cookie sheet and pour thin layer of mixture into pan and let set in sun to dry.

Butter Sauce, Sterling Purser
1/4 tsp chicken bouillon
1/2 tsp celery seed
1/4 lb butter
Melt this and pour over 6 lbs of carrots. Do not over cook the carrots. Serve hot. You can also reduce this for a smaller batch of carrots.

Sugared Peanuts, Darlene Purser Bair
2 cups peanuts
1 cup sugar
1/2 cup water
Boil together on low temperature until dry and sugary. Sprinkle a little salt. Spread on cookie sheet and bake 1 hour at 300`, stir once.
