White Cupcakes, Darlene Purser Bair

1/4 cup shortening
1 cup milk
2 cups flour
1 tsp vanilla
1 cup sugar
1 egg (well beaten)
1/4 tsp salt
4 tsp baking powder
1/4 tsp lemon extract (optional)

Add sugar, shortening, salt, and baking powder. Mix well and add egg, vanilla, and a small portion of milk. Mix well. Add flour and rest of milk a little at a time. Makes 1 1/2 dozen.
